Protein Diet Soup
3 Tbs olive oil
3 cloves garlic
1 1/2 onions
3 cups each of zucchini and yellow squash,
sliced and diced or 3 cups frozen mixed vegetables
or broccoli
3 cups died cooked chicken
1 large can of diced tomatoes
3 cans (14 1/2oz each) or cartons of chicken broth
6 cups fresh baby spinach or 3 cups frozen chopped spinach,
thawed and squeezed dry.
In large saucepan over medium heat, add oil, garlic and onions;
cook until onions are transparent.
Raise heat and add remaining vegetables, except spinach
Cook until tender.
Add chicken, tomatoes, and broth;
bring to a boil. Reduce heat and simmer for 10 minutes.
Add spinach and cook until wilted.
Eat for 1 week and watch the weight drop off.
